I understand the spoil rate is 100%, but why doesn't this beauty ever spoil more than 1 piece? E.g. 2 or 3.

That's correct, but then it should be 100% and 1-3 quantity :'(
50% x3 chance = ?....... is 100% chance to get 1 and 50% to get 2 but they made only 1x amount so u get only 1 corect me b1tchies if im wrong :)

Eye of Watchman, as it is now, you get the same amount as if the server was 1x spoil chance/amount, (100% [1] is the same as 50% [1-3]).
Chance is 60% to get 1 sop on 1x rates but there (rpg server) is 1x 100% so u get 1x amount 100% and that 60% became 100% on rpg

It's simple. On an 1x server that npc should spoil 1, 2 or 3 sops with 49% chance. On RPG x3 server it should be 100% chance to spoil 1, 2 or 3 sops as the amount is kept the same, only chance is increased. If it spoils only 1 sop every single time, then this is a bug and it should be fixed.
The in-game descriptions are not very accurate I've noticed so far. Sometimes a mob with 1-3 quantity always spoils 1 (eg. Probe Golem Champion I) and it happened otherwise as well to me - a mob with 1 quantity listed spoiled 1-3 (eg. Soldier of Darkness, Cruma 2).
